Zucchini Bread


3 cups flour
3 eggs
2 cups sugar
1 cup oil
1 tsp vanilla
2 cups grated zucchini
up to 1 cup mini chocolate chips (optional)
1 tsp cinnamon
1 tsp salt
1 tsp baking soda
¼ tsp baking powder
½ cup sour cream


2 greased pans


beat wet ingredients, add dry ingredients, mix only until blended


bake 350 F for 1 hr to 1 hr and 20 minutes, until toothpick comes out clean
